Operating instruction
- Heat phase A1 at 70-75°C.
- Phase A2: Disperse gellan and xanthan gums into glycerin and then add into Phase A1, previously heated at 70-75°C.
- Phase A3: Heat water at 70°C and solubilize Amphisol® K. When A3 is homogeneous, add into A1+A2.
- In the melter, prepare phase B and heat at 70-75°C.
- Proceed with the emulsion at 70-75°C: under stirring (2000 rpm), add phase B into Phase A1+A2+A3.
- Homogenize for 5 min with rotor stator at 3000rpm.
- Cool under normal stirring and at about 45°C, add Phase C.
- Adjust pH with D.
- Cool under normal stirring until 25°C.
